The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Place the listed items in a pan, heat until it reaches a light boil, stirring until the sugar dissolves. Next, turn off the heat allowing it to cool down fully. Transfer to a clean bottle, close it keeping it in the fridge, it will last for up to one month.
Preparing the Premix: Combine the specified liquids in a big jug, allow it to infuse for an hour, then strain preferably using muslin, to ensure it's completely strained.
For serving: Add 85ml from the premix into a cocktail shaker containing ice, and agitate carefully for about 60 seconds until cold. Filter into a frosted cocktail glass or similar, garnish with some cranberries adding the final touch with a quick spritz with the mandarin essence over the drink.
